  3. Sauce: add scallions, rosemary, thyme, chives to pan that lamb was cooked in. If needed add oil. Cook until softened. Add wine and cook to reduce by 2/3. Add beef broth and cook to reduce by 1/2. Stir in butter. Taste and add salt and pepper as needed.
  4. Plate lamb and drizzle sauce over them. Serve remaining sauce in a dish. Couscous is a great side for lamb. Enjoy!
