- For outer wrap
- 2 cups all purpose flour
- 1 tsp sugar
- 1 tsp salt
- 1 tsp ghee
- Hot water
- Inner filling
- 500g paneer
- 1 onions sliced rings
- 2 capsicum sliced rings
- 1 tomato sliced
- 4 tbsp Greek yogurt
- 1 tbsp Kashmiri chilli powder
- 1 tsp lemon
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp ginger garlic paste
- 0.5 tsp jaggery
- 1 tbsp olive oil
- 1 tsp black salt
- Salt
- Other
- Red chilli sauce
- Tomato ketchup
- Chat masala
- Pepper
- Onions sliced
- leaves Coriander
Instructions to make to make Paneer Frankie
- To make the dough: Take all purpose flour + sugar + salt + ghee in a bowl. Add warm water step by step and knead the dough. Stretch the dough and knead well for 12-15 minutes until it’s soft. Apply some oil and Wrap it in a wet cloth / napkin for 1 hour and rest it
- Now lets marinate the paneer. In a bowl take 1 tbsp oil + Kashmiri chilli powder + garam masala + lemon + ginger garlic paste + jaggery + cumin powder + coriander powder + black salt + salt + 4tbsp of thick yogurt. Mix well without lumps. Now add paneer cubes and rest well
- Once the dough is rested for 1 hour. Cut it into small balls, apply some oil on it and rest for another 15 minutes. Resting is necessary to remove the gluten from all purpose flour and rolling the rotis
- Now in a pan take some oil. Add marinated paneer. Let it cook for 5 minutes. Now add onion, tomato, peppers. Add a bit of salt and chilli powder. Sauté for 5 minutes. Now transfer it to airfryer and keep for 2-3 minutes
- Lets roll the dough to make outer cover or parata layered. Now take the dough balls. Make a circular roti. Apply some ghee and dust the wheat flour. Now roll it back in layers and make a round dough ball. Now roll this dough ball to make layered parrota or outer covering.
- In a pan take this layered parrota/roti/purr covering. Press with wet cloth until it’s cooked on both sides partially. Now apply ghee on both sides and cook it until it’s crisp
- Now lets assemble the Frankie. Take cooked roti from above step. Add the paneer filling. Add chilli sauce and tomato ketchup. Add chat masala, mustard sauce, onions, pepper on top of it. Roll it and you paneer Frankie is ready
- Optionally you can use wheat flour instead of all purpose flour to make it healthy wrap.
